The three enemies of fluffy pancakes: overmixing (develops tough gluten), cold pan (batter spreads too thin before setting), and impatience (flipping too early). Test pan readiness with water drops — they should dance and evaporate in 2 seconds. Use ¼ cup (60mL) batter for standard 6-inch pancakes. Flip when: surface bubbles pop and leave holes that don't fill back in, and edges appear set and slightly dry. Only flip once — double-flipping compresses the structure. For Japanese soufflé pancakes, use ring molds, cover the pan, and cook on very low heat for 5+ minutes per side. Rest batter 5 minutes after mixing — this allows flour to hydrate and gluten to relax, producing a more tender result.
