Cold brew extracts coffee compounds using time instead of temperature. The lower temperature (room temp or refrigerator) extracts 67% less acid than hot brewing, producing a smoother, sweeter cup. The trade-off: it takes 12-24 hours instead of 3-5 minutes. Concentrate at 1:5 ratio is potent — always dilute 1:1 before drinking (with water, milk, or over ice). Grind size matters enormously: extra coarse (like raw sugar) prevents over-extraction and makes filtering easier. Fine grounds in cold brew produce a bitter, muddy result. Steep in the fridge for a cleaner flavor or at room temperature for more body. Cold brew concentrate keeps in the fridge for 7-14 days. It contains roughly 200mg caffeine per cup (more than hot brew) because of the higher coffee-to-water ratio.
